I think PEX would take the heat. I used it in a hot water furnace system that regularly saw 200*F, sometimes 212*F. You would need metal hose barb ends.

Sounds like you need to retrace your steps. Unless the manifold job took you months to complete it seems very unlikely the injectors all suddenly started sticking.
