Actually you should be able to use two fittings that merge into an AN. Metric to AN on one side, standard to AN on the other. Check out earls adapters.

I assume you are taking dual vs Single? For anything under 400hp a single 3" is typically enough. Dual 2.5 is good for 400whp or so but is a pain to install and deal with.

I bet your tuner was adjusting fuel tables after each run. Now the tune is commanding fuel from a fuel system that is not powered to handle it. Just a hunch.

On the Dyno you also don't get the aero loads as driving on the street. Your pump may have been just barely adequate on the Dyno but not enough to overcome aerodynamic loads on your car.
