Which FPR, O2 sensor, and gasket kit?

Engine: L98(5.7 L TPI)
Transmission: 700r4(A4)
Axle/Gears: G80 RPO, 3:23s, Auburn Racer's Diff
Which FPR, O2 sensor, and gasket kit?
Ladies and Gents,
I'm the proud owner of 1991 GTA with a 350 TPI. My motor is mostly stock. But, I have aspirations of future mods (heads, cam, etc.).
I'm about to pay my mechanic to replace my fuel injectors with Bosches.
While I'm at it, I'm going to install an aftermarket fuel pressure regulator. I've heard bad things about Holley. Can anyone recommend a brand/model?
Also, I'm installing the following Fel Pro gasket kit.

Are there any other gaskets that can be replaced while we're in there?
Additionally, I have a bad O2 sensor. Can you recommend a good replacement?
Finally, should I take this time to do any other upgrades or routine maintenance on my motor? Is there anything else that should be replaced while this stuff torn apart? Should I replace or upgrade the fuel rails? (Will a virtually stock motor benefit from upgraded fuel rails or a fuel pressure regulator?)

Thanks for your feedback. Regarding the gaskets, I already ordered Felpro. I'm just wondering if there are any other gaskets that I can replace that aren't included in the Felpro kit I ordered.

I'm torn between the SouthBay injectors AFPR and the Breathless performance AFPR. Any thoughts?

Ended up getting the following parts...
AFPR: Breathless Performance

The kit does not include a fuel diaphragm, so I picked one up from south bay.
O2 sensor: Found an AC Delco one on Amazon.com for about $18, shipped. (Advance Auto parts said they couldn't get a Delco one on, but it was on their books for over $70. Scoggin Dickey wanted over $30 for the sensor.)
