I'm possibly building a 383 and I'm going through what I would need. obviously crank and rods but I'm wondering if I need a 400 balancer or a 350 balancer. I currently have a fluidampr 620101 which is a 6.250. Any help would be great. and if you know of anything else I may need.

If your using a cast or forged crank go with a 6.0 rod and you can easily internally balance the crank.
Rods at least step up to the Scat Procomp rod with the 7/16 bolts. Using a stroker rod you will not have to use a reduced base circle cam either. Those rods should be right around 300.00
Pistons I have used a lot of the Mahle's with great results.
Whats your budget?

Howards track smart stroker with Scat stroker clearanced 5.7 rods(no pistons ring spacers rings needed or small base circle cam)and ICon pistons require Mallory metal for internal balance.180 grams in the front and 200 grams in the rear.

The cheaper ones are based on 400 cranks which require the specific 400 only flexplate and balancer.
The better quality stroker cranks are 350 based and use the normal "neutral" balance balancer and a reg SBC flexplate

I use 6.000 rods all the time so far no need for ring spacers and no need for a 600.00 balance job either!! with 6.000 rod less side loading and less friction and lighter pistons as well. No reduced base circle cams either!!

Restricted 2 barrel engines the 6.250 rod works fine.
A good example is take a 5.565 rod and piston put in cylinder 1 and a 6.250 rod and piston in cylinder 6 and slowly turn the engine over and you can see the difference between the two.

The internal balance rotating assemblies are more durable.In my case I wanted to have the option of running a 700R and later have the possibility of running a T56.
