Overthinking simple fix?

Car: 1984 Trans Am
Engine: 5.7 Liter V8
Transmission: Auto 700R4
Axle/Gears: Stock
Overthinking simple fix?
So my car hesitates to try and go above 30 when its warmed up and shuts off after about a minute of trying to get it to go. It was sitting for awhile after the engine rebuild and has a inline fuel filter running to it. Would the fuel filter cause this kind of problem? It only has about 300 miles on it but the car sat forever in a dusty environment so I dont know if it would get clogged or not. Choke flap is all the way open when it does it so I know thats not it. No codes being thrown either.

I'll just try the fuel filter and put a clear one on to give me an idea whats flowing in that line. What lines have to be hooked up to the charcoal canister? I have one line hooked up (emissions have been removed though).
