High Header Temps??

Car: 1992 Camaro RS
Engine: Rebuilt 350 going in after paint

High Header Temps??
So I've been having hot start issues with my Camaro where the engine is flooded/ing when I try to start it after I've been running it for a while. Like if I run to the parts store and come back out to go home. Engine is not overheating at all, but while I was looking into it today I noticed my headers were REALLY hot after the engine had been idling for 5-10 minutes. I grabbed my IR gun and went around checking the header temps and they all read between 780* and 810*. I'm assuming that is way too hot and causing problems with the fuel boiling in the lines or carb bowls. Am I right to think those temps are way too high?
I tried searching for 'normal' header temps and really didn't find anything useful. Every post I came across talked about coated headers and mine are uncoated.
Engine specs:
SBC 350 rebuilt 2K miles ago
Very mild cam
Holley 650 VS carb
Ported 416 heads
Dynomax uncoated shorty headers
Dynomax dual exhaust kit installed this past winter
No cats with Thrush glasspacks in the stock muffler location

I have heard that header temps should be around 400 - 600 degrees when car is warmed up.
Could you be running too lean?

Thats around where I thought they should be. Its possible I'm running lean, but I don't have an O2 sensor hooked up to check. The spark plugs don't seem to show signs of running lean, but I'm new at reading plugs so I could be reading them wrong.
I did play with the mixture screws after I posted that and temps did drop down into the 580*-620* range so that may have been the case. The only thing is, I turned the screws IN and if I remember right, that leans out the mix right? Timing hasn't changed from the 7* BTDC at idle that I originally set the engine at last spring after the rebuild. I do need to change the springs in the distributor as I'm only getting about 28* advance at 3K.
