I'm assuming a hardtop car? I got my head stuck between the steering wheel and the roof the first time I tried putting a helmet on at the track in my hardtop formula, same issue...
I ended up cutting the seat rails, mounted the seats so they mount a little bit further back than stock (need the legroom, I'm taller than you), and when I did I cut down the back legs and re-welded them back so that the backs of the rails were against the floor. That way when I slid the seats back they lowered down to the floor and when my wife slid them back up they were pretty much at stock height.
