Using the stock 4L60 trans behind the 5.3, your buffer box will do all the work and the speedo will read just fine
Using a 4L60E you will need a separate control box from TCI or similar. Im not sure if they include a VSS decoder in their control module. You may need an extra bit for the signal, ask them directly
Any T56 sans LTx/LSx PCM will require a dakota digital converter box
BRP offer headers, noone has posted fitment results for them though so you may get a lame duck
Another option is modified SBC headers
Why carb over EFI? The 5.3 isnt hampered very much by stock 4th gen manifolds/stock LS1 intake and you cant beat the street manners of LSx EFI over carbs

also, your temp & oil pressure guages would be run from separate sensors/senders that are not part of the pcm harness, so you'll just need to find spots to thread those into the block and you're golden.
i too second the fi recommendation, especially since you can get most of the needed truck > car parts (intake, injectors, fuel rails) for less then it costs for the carb conversion parts.
