Coolant bypass mod - 2 good questions.

I've read the coolant bypass mod page on this site a million times. I've seen other guys on this site who have left the water outlets open on their throttle body/intake manifold. I have 2 questions regarding the coolant bypass mod. Also, mind you, I've already taken out the heater core & control valve for that, so those are gone.

1.) How do you do this mod without losing coolant from leaving the water outlets on the throttle body (on the intake manifold) open?

I tried it and coolant was coming out of the right side outlet I left open. It makes no sense so far. I'd love to remove the U-shaped hose entirely.

2.) Why would someone do this if the coolant is meant to keep the engine cool with that coolant? It almost makes no sense to remove the U-shaped hose from those 2 outlets.
