Benefits of hooking up charcoal canister

I was wondering if I should hook my carb back up to the charcoal canister. My tank is still hooked up but the carb is no longer connected. The plug on the front of the carb isnt capped or lined, just open there and I'm wondering if I'm getting some problems from this with capping out at 30mph every now and then and stalling every so often. Its a 81-85 GMC Truck Quadrajet non ccc.

Having it unhooked shouldn't cause any of the problems you mentioned. It shouldn't make a difference if you cap the bowl vent nipple on the carb or leave it open either, but I would probably cap it just to be sure nothing gets into the carb.
